We say no to waste

An excellent reason, the reuse of leftovers, important above all to avoid food waste, unfortunately still too high in the world. Although the latest statistics published in the report that Waste Watchers international produced in collaboration with the Department of Agri-Food Sciences and Technologies of the University of Bologna revealed that in 2020, the year of the pandemic, Italians threw 11 in the dustbin. , 78% fewer food products than in 2019, unfortunately there is still little to rejoice.

According to the FAO, in fact, every year about a third of all that produced ends up in the garbage, in Italy alone we throw away food for 13 billion euros. The meat supply chain, however, represents a small exception, impacting, according to the latest Nielsen data, only 5% of total waste.

On the occasion of the International Day Against Food Waste, Carni Sostenibili – the non-profit association for the conscious consumption and sustainable production of meats and cured meats – collected the 5 essential recipes to make with leftover meat and cold cuts. To make this "anti-waste guide" indispensable, the advice of nutritionist Elisabetta Bernardi.

How to recycle meat and cured meats: a nice filling is the ideal solution

Leftover meat and cured meats are the perfect ingredient in one of the main dishes of the kitchen of reuse: stuffed vegetables. Not the usual meatloaf, therefore, but a perfect match with vegetables: zucchini, peppers, but also tomatoes and aubergines. The ingredients? Minced meat mixed with a few slices of salami, eggs, stale bread soaked in milk and parmesan and boiled vegetables. Once the dough is ready, lay it inside the vegetables you like best, pour a little oil and bake in a hot oven for about 20 minutes. “The leftovers ennoble the dish for their supply of high quality proteins and vitamin B12, present exclusively in foods of animal origin”, explains the nutritionist.

How to recycle the meat of the broth: from boiled meat to meatballs

The boiled meatballs are a dish of the Roman culinary tradition. Preparing them is very simple: if you have some boiled meat left over, just chop it, add it to a bowl with the boiled potatoes and mix with the grated rind of a lemon, parmesan, ricotta, eggs, salt and pepper. The procedure, then, is that of the classic meatballs sautéed in breadcrumbs and cooked in a pan. The secret to a crispy crust and a healthy frying? "Use hot extra virgin olive oil", says the expert. "Or, for a light alternative, baking in the oven is fine too". Perfect "accompanied with a side dish of grilled vegetables – continues the doctor – a small portion of bread and a portion of fruit and a nutritionally complete meal is served!"

How to recycle roast chicken? With a soup

Tasty and tender when hot, a little less the next day after resting in the refrigerator. To avoid wasting roast chicken, a soup is the perfect recycle. "Soups are foods that should be consumed more often – says Dr. Bernardi – not only because they are a real comfort food, but also because numerous studies show that by increasing the percentage of water or water-rich ingredients in the dish, it lowers the energy density of a food and it is possible to first reach the sense of satiety and therefore to reduce the calories of the diet without too many sacrifices ". How to do? Prepare a broth to your taste by adding a few grains. 10 minutes from the end of cooking, insert the pieces of cooked chicken. Season with salt and pepper just before turning off the heat and complete the dish with a drizzle of olive oil.

How to recycle the leftover roast: green light for the rolls

They are loved by the whole family. And in all sauces! In white or with sauce, veal rolls, enriched with a few slices of cold cuts, are a good alternative to not always eat the "usual" leftover roast. A delicious dish "to which you will add a strip of carrot, or pepper, especially appreciated by children and the elderly, for the extreme tenderness of the meat. Veal is in fact used very often as a food for those who have difficulty chewing, but who still have high nutritional needs. It is a particularly good source of protein, niacin, vitamin B6, vitamin B12, phosphorus, zinc and iron, and 100 g of veal provide over 25% of these nutrients ", according to the expert.

How to recycle the ragù: the omelette is served

Neapolitans love pasta, but meat is also an ideal ingredient for an omelette. The meat sauce is perfect, but also boiled meat or stew. Just add it to a bowl (possibly chopped first, if the pieces are large) in which you will have beaten some eggs. Add chopped parsley and, if the mixture is dry, soften with a few tablespoons of milk. In a pan, heat a generous tablespoon of oil, pour the mixture and brown on both sides. And as a side dish? According to Dr. Bernardi, the best combination "is a fresh mixed salad, a slice of bread and a fruit. All to add a share of carbohydrates to a dish very rich in noble proteins like this omelette ", concludes the expert.
