Ingredients for 2 people: 1 small shallot, 150 g of fennel, 50 g of broccoli 100 g of sweet potato, 1 sachet of Saffron 3 Cuochi (diluted in a little warm water), 60 g of sliced almonds (at the end of cooking), extra virgin olive oil and water to taste.
Start by preparing the vegetables. Chop the shallot, peel the sweet potato and cut it into cubes, cut the broccoli into 4 parts, clean the fennel and cut it into strips. In a wok, or saucepan, season the chopped shallot with extra virgin olive oil to taste. Add the sweet potato, broccoli and fennel, and cook for 2/3 minutes. Combine a sachet of Zafferano 3 Cuochi diluted in a little warm water, and a couple of glasses of water. Cover with a lid and cook over medium-low heat for about 20/25 minutes, stirring occasionally. When the vegetables are almost cooked, add the sliced almonds and cook over high heat for another 5 minutes.
