  • Dark chocolate. Unlike other chocolates, the term “dark” is a quality criterion which indicates a higher cocoa content, i.e. at least 43% total cocoa solids, including at least 26% cocoa butter.

Finally, when the denomination “chocolat” or “milk chocolate” is supplemented by a quality criterion, such as “extra“, “the cocoa content must be higher compared to the compositions in force“, the site further specifies. For example, a milk chocolate must have at least 30% cocoa solids and at least 18% milk, compared to 25% and 14% for a milk chocolate without this mention.
