There citrus zest and juice, that we can replace with a glass of limoncello (even the one in the milk version) will give an unforgettable flavor. And the mix between cow’s milk ricotta and chopped almonds guarantees softness but also that minimum of crunchiness you need. A quick, easy, light preparation and everyone will ask us for another slice.

Lemon scented cake

The leftover lemon-scented cake can be stored in the refrigerator, wrapped in plastic wrap for a couple of days.

Ingredients:
300 g of flour 00
150 g of cottage cheese
200 g of granulated sugar
80 ml of seed oil
70 ml of whole milk
18 g of baking powder
4 large eggs
1 lemon
100 g chopped almonds

Preparation

We squeeze the lemon to extract the juice and then grate the zest, avoiding the white part, keeping it aside.
Then we pour the ricotta cheese, well drained, in a bowl. We add the milk at room temperature, the oil, the peel and the lemon juice. Then we mix everything well using the electric whisk at medium speed.
In a separate bowl we open the whole eggsmix them with the granulated sugar and beat everything with an electric whisk for 10 minutes.

At that point we add the cream based on ricotta cheese and incorporate it with the electric whips. Finally, it’s the turn of the flour, sifted very well a couple of times, the yeast and the chopped almonds. Continuing to operate the whips we also mix these and the base of our lemon scented cake is ready.
Let’s take one die equipped with a hinge with a diameter of 24 centimeters and pour the dough leveling it. Then we put the mold in the oven preheated to 180 ° for about 50 minutes. We check the cooking of our cake with the toothpick test, then take it out and let it cool directly in the mold. Only when it is completely cold let’s take it out and sprinkle with it sugar icing before serving. Her perfume will be an irresistible attraction for everyone.
