Cocoa ice cream stick
Like the cocoa popsicle. "Ideal – explains Angelica Amodei – even for people who are lactose intolerant because I have chosen an HD (High Digestible) milk, that is a milk that has been deprived, through special procedures, of most of the lactose contained in it and that does not it is only useful for those who are intolerant to this sugar, but also for those suffering from digestive problems and a swollen stomach ".
Good, fresh and genuine, the ice cream stick refreshes us in spring. In addition, very few ingredients are enough and it is within everyone's reach, even those who are not very practical in the kitchen. Not to mention that, as it does not include the addition of sugar, it is also suitable for those on a slimming diet or for children.
"A recharge of energy, especially if it is a period of intense physical and psychological work – explains the expert. As we all know, in fact, cocoa is an extraordinary food because it is rich in antioxidants, magnesium and iron: all substances which, in addition to giving mental agility and promoting physical performance, consequently also act on our mood, producing feelings of happiness and satisfaction. ".
300 ml of HD milk

Cup of light coconut cream with red fruits
For those who love spoon desserts, however, coconut can prove to be the perfect food to surprise our mom. Its "milk", that is the juice produced by squeezing the pulp, is rich in fatty acids, especially lauric acid, a friend of our heart as it helps to increase blood levels of "good" cholesterol (HDL), thus exerting an effect preventive on cardiovascular risk.
"The erythritol present in the recipe, however, – says the writer – is an excellent and healthy alternative to the classic cooking sugar. With the absence of calories, it does not affect blood glucose and insulin levels, making it suitable even for those who follow a slimming diet. In addition, it has a pleasant taste, without aftertaste, does not damage the teeth, has no laxative effect and does not irritate the intestine. Perfect for both hot and fresh preparations. It is found in supermarkets and health food stores, where you can possibly buy xylitol, another valid alternative to white sugar ".
Egg yolks, 2
Erythritol or xylitol, 1 level tablespoon
Coconut milk, 400 ml
Cornflour, 1 1/2 tablespoons
Organic lemon zest, 3/4 strips
Red fruits and / or dark chocolate flakes to decorate
In a bowl, beat the eggs with erythritol or xylitol (even with a spoon). In a saucepan, heat the coconut milk (without sugar, do not use the cream! You can find it in the supermarket next to the vegetable milks of soy, rice, oats …) with the lemon zest. When the milk is hot, pour it (even with the lemon zest) into the bowl with the egg yolks, mixing well. Then bring to the fire, turning with a silicone spoon to avoid sticking to the edges, adding the sifted cornstarch. Continue stirring over low heat. When the cream starts to thicken, turn off, remove the lemon and pour into the cups. Allow to cool, then serve with the red fruits to taste.
“Also excellent with dark chocolate flakes. Or, why not, both of them. They marry very well together, just like mother and daughter ", concludes the expert.
