The aperitif is not a real meal, on the contrary, it doesn't really exist. It is exaggeratedly caloric and above all insane. To explain it is Dr. Federico Francesco Ferrero, nutritionist doctor, judge of The Test of the Cook and winner of Mastechef 2014 who in his latest book, with an eloquent title, "The apericena does not exist", explains that eating healthy and being lean is not it involves making hard sacrifices at the table or giving up on social life.

We interviewed him to ask him where we are wrong when we don't lose weight and to give us some expert advice on how to extricate ourselves between cocktails, appetizers and false diets.

Your latest book is entitled "Apericena does not exist", does it explain to us in what sense?
In the sense that it is not a traditional meal, neither nutritionally correct, nor gastronomically interesting.

Apericena is a calorie bomb, so do we have to give it up?
If someone enjoys drinking dubious spirits and pizzas, do it as well. Knowing, however, that in this way weight and health will be affected.

"I'm always away from home so I can't go on a diet," is that true?
Nobody should follow a diet. We must learn to eat properly. And my book explains exactly how to do it even if we always have lunch or dinner outside the home.

Can you give us some tips on the lunch break?
Try at home, in the canteen, at the bar, to eat real food: whole carbohydrates (pasta or rice) and lots of fresh vegetables from a farmer who grows without pesticides.

What are the diets that really work and what should be absolutely avoided?
No diet works over time but only personalized nutrition education. Avoid three-day diets, fasts, do it yourself schemes.

On his website he writes: "Food is my passion and my profession", which ingredient should never be missing in your kitchen? Can you tell us what is your favorite dish?
Good salt must never be missing, from a traditional harvest, by the sea: the cheap ones spoil the taste of any food: try to feel the difference. Potato gnocchi, as my grandmother did, practically without flour but with good mountain potatoes.

You won Masterchef in 2014, could you reveal us a recipe or a chef's secret?
The only secret is to go shopping by choosing fresh raw materials, free of preservatives, antibiotics, pesticides and cooking them at the moment, what very few chefs do today.

As judge of the show "The Proof of the Cook", can you tell us what makes a dish well cooked?
The main ingredient is love for food, for the kitchen, and above all for the other. When the kitchen is just an exhibition, it loses both the flavor and the encounter it favors.
