How and when to take care of the grapes
Grape care consists in eating black grapes five times a day, preferably freshly picked and chosen according to the local grape variety. Ampelotherapy can be performed on Saturdays and Sundays for as many weeks as you want as long as fresh and freshly picked black grapes are available and is suitable for all adults who do not have particular health problems (for example, those who have diabetes should avoid it). The beginning of autumn is the ideal time to take care of the grapes. “During the summer – explains prof. Pier Luigi Rossi – the human body tends to produce a higher dose of oxygen free radicals. Before the cold season, the body must be protected! In the past they understood this through direct experience. Today we know the scientific reason for the effectiveness of the grape cure: it blocks the negative action on health of the toxic molecules produced during the summer! ".

The effects can be seen immediately: "During the days of grapes – underlines the doctor – there is a strong daily diuresis, useful for eliminating water retention". The food day includes the intake of all nutrients: carbohydrates, vitamins and mineral salts are provided by grapes, vegetables and raw and fresh vegetables in season; proteins from oil seeds; the lipids, as well as from the oil seeds, from the extra virgin olive oil and the grape seeds contained in the grains, which should not be discarded, but crushed during the intake of black grapes to release their omega 3 and other essential nutrients. "With a diet of this type, the liver undergoes a healthy phase of" discharge "of glycogen and fat – points out the expert. The liver is the director of the entire metabolism. But the effects on grape intake, in the periods of the year in which it is available, are also seen in the long term. This is thanks to its polyphenols, which can support brain function in several ways: from reducing oxidative stress to promoting healthy blood flow, to maintaining adequate levels of a key chemical for memory.

The secret? Resveratrol

This antioxidant molecule, present in addition to black grapes also in berries, according to a preliminary research, for now on animals, carried out at the Texas A&M Health Science Center College of Medicine by Ashok Shetty and published in Scientific Reports (published by Nature), could counteract memory decline, learning difficulties and even mood worsening that are typical age-related ailments. But not only. In collaboration with researchers from the University of Bari, a team of researchers from Create Viticulture and Enology, in collaboration with researchers from the University of Bari, carried out a study on humans to evaluate the link between the prolonged intake of grapes and the coagulation and fibrinolysis processes emerge that the health effects deriving from the intake of fresh table grapes could help protect the body from the onset of cardiovascular diseases. In addition, it seems that prolonged intake of grapes also has an anticoagulant effect, because by increasing the fibrinolytic capacity of the plasma it reduces the mechanisms of thrombus formation and enhances those responsible for their removal.

All good reasons to bring this precious product of nature to the table and enjoy its healing and protective actions on health. Furthermore, grape care can also be achieved through fresh, just squeezed juice. “In this case – suggests prof. Pier Luigi Rossi – the total daily dose of fresh homemade black grape juice is 700 ml, to be taken in graduated doses in the five daily food contacts. In both cases (fruit or juice intake), ampelotherapy should be combined with water therapy, with 2 glasses of water in the morning and evening and 1 glass of mineral water every hour ". Which water to choose? "Water with a fixed dry residue higher than 500 mg / liter, rich in minerals, and a dose of bicarbonate ions higher than 600 mg / liter is recommended for controlling body and tissue acidity (check the bottle label)", concludes the expert.

The menus of the "typical day"

BREAKFAST: 1 hot drink (to choose between tea, barley, bitter cocoa found in hot water, vegetable milk or herbal tea); 30 g of almonds or walnuts or other oily seeds; 200 g of black grapes

DINNER: 1 free portion of finely chopped mixed seasonal raw vegetables dressed with extra virgin olive oil, apple or wine vinegar; 30 g (net of waste) of almonds or walnut kernels or other acceptable oily seeds; 200 g of black grapes
