This strudel is special: asparagus takes center stage in the kitchen

A particular and delicious appetizer with only four ingredients: here is the delicate strudel with asparagus, ham and cheese

In spring, one of the main ingredients in the kitchen becomes the asparagus and today they will cook them in a very special way. Because they will become the stuffed with a strudel salty, inviting and delicious, to be served as an appetizer or as part of a finger food version of an aperitif.



A sweet recipe that becomes salty, but very simple to prepare. You need the threshold pasta, even bought ready-made, fresh asparagus. Proscoiuitto and a soft cheese like crescenza, stracchino, certosa, but also sweet gorgonzola.

Delicate strudel with asparagus, ham and cheese: the recipe step by step

If there are any slices of delicate strudel left over with asparagus, ham and cheese, no problem. Let’s wrap them in plastic wrap and keep them in the fridge. When it’s time, we’ll reheat them in the oven in the microwave or air fryer.



1 roll of puff pastry
300 g of asparagus
120 g of cooked ham in a single slice
140 g of crescenza
1 large egg
Salt to taste
pepper as needed


Let’s start from preparation of asparagus. Let’s wash them well under running water, then with a small knife or a vegetable peeler remove the hard part of the stems.
Let’s put a cook the asparagus in boiling water and already salted (or steamed) and turn off when they are still hard enough because they will finish cooking in the oven. It can take 10-12 minutes to be ready. At that point let’s drain them taking care not to damage them and let them cool in one colander because they lose water.

While we wait, we prepare the others ingrediants: take the slice of ham and cut it into cubes. Then in a dish add it to the crescenza, taken out of the refrigerator at least 20 minutes before, mixing everything well.
We resume the asparagus, remove the tips, keeping them aside and cut the rest of the stem into small pieces, adding it to the rest of the ham and cheese filling. We mix gently so as not to break the asparagus and the inside of the strudel is ready.

We roll out the roll of puff pastry and prick the central area with the tines of the fork, then spread the mixture based on crescenza, ham and asparagus there. Then we fold the dough to form the classic strudel brushing the entire surface, even on the sides, with the lightly beaten egg.
Place the delicate strudel with asparagus, ham and cheese on a baking sheet and put it in a preheated oven at 180 ° for about 35 minutes or in any case until the surface is golden.
When we remove the salty strudel from the oven, let it rest on a grill or cutting board for about ten minutes. Then cut it into slices and serve it warm.
