For the pizza dough
500 g 00 flour
3 level teaspoons of instant yeast for quiches
200 ml of water
100 g of milk
2 tablespoons of extra virgin olive oil
2 teaspoon of salt coffee
For the stuffing:
200 g mozzarella cherries
150 g raw ham
2 salad tomatoes
basil leaves
salt up to taste


Let’s start from the base, that is pizza dough. We sift the flour and baking powder directly into a bowl, then immediately add the salt. Then let’s move on to the liquids and pour in the water, milk and extra virgin olive oil.
When there is everything, we begin to mix with a spoon to begin to incorporate and then directly with the hands until you get a well-blended dough. Let’s say that in 10, maximum 15 minutes of work we can manage. At that point we cover with cling film and let it rest for at least 20 minutes: ours pizza dough ready.

Now we can move on to preparing the tricolor ravioli. We take the classic trays to form the ice and each hole will become a ravioli. So let’s think about it, we don’t use trays with individual spaces that are too small.
A veil of 0 flour on the bottom, then after dividing the dough in two and having rolled out both parts with a rolling pin, let’s spread one on the bottom. In each hole we insert a cherry of mozzarella, then add some raw ham cut into strips, a leaf of basil and a slice of well washed tomato.

When we have completed, we cover with another layer of pizza dough. We cut out the edges well and put in the freezer for 24 hours in order to compact our tricolor ravioli well.
Finally, the most beautiful part, that of cooking. Let’s take them out, cut them one by one with a sharp knife and take the last phase. Put them on a dripping pan covered with parchment paper and put them in a preheated oven at 180 ° for 30 minutes.
Time to take them out and immediately bring them to the table, they must be eaten hot and racy inside, otherwise the surprise effect vanishes.
