It is loved by young people around the world and gets ready in minutes. But the expert warns: "pay attention to the intestine"
Ristretto, espresso, long or… whipped coffee? According to a research conducted by Deliveroo carried out on a sample of a thousand Italians, whipped coffee was the most emerging among the habits of the year that is about to end. This special coffee cream – whose recipe is very popular among Tik Tok videos especially among young people – in 2020 was "tested" by 25% of Italians. And 53% say they intend not to deprive themselves even in 2021.
But what exactly is whipped coffee?
Also known by the name of dalgona coffee, it is produced by whipping instant coffee with sugar and water, obtaining a caramel-colored foam that is poured on cold or hot milk, depending on your preferences, obtaining a drink similar to a cappuccino in reverse: in that classic, in fact, the layer of coffee is at the bottom, while in whipped coffee it is at the top.
A drink that is conquering the whole world, to the point that the prestigious New York Times has even dedicated an article to it. As the American newspaper explains, whipped coffee gained prominence in South Korea in January, going viral around the world. In particular on Youtube, Tik Tok, and in social networks that lend themselves well to the publication of images such as Pinterest and Instagram, where there are hundreds of thousands of posts dedicated to the drink.
A success also guaranteed by the easy realization of the recipe, within everyone's reach, which involves the use of very few ingredients found in every home. A pleasure for those who love sweetened coffee.
How it is prepared
To make it, combine 2 tablespoons of granulated instant coffee, 1/2 tablespoon of sugar and 2 tablespoons of hot water in a medium bowl (you can use up to 2 tablespoons of sugar for a sweeter drink). It is important that the water is hot – Michelle Lopez, food blogger and founder of Hummingbird High suggests to CNN – as this is able to dissolve both instant coffee and sugar more quickly and allows for a softer and more frothy coffee. Then start mixing, with a whisk or a mixer, and continue for about 5 minutes until the mixture is very creamy and soft. Pour the cream into a glass of cold milk with ice (or hot depending on your taste), mix and drink.
The opinion of the nutritionist
“This drink, as well as the classic cappuccino – explains prof. Pier Luigi Rossi, medical specialist in nutrition sciences in Arezzo – may contain a molecule, casein tannate, derived from the union of the casein in milk with the tannic acid contained in coffee. Casein tannate is not very digestible: it retains the casein and releases it slowly. This effect can have the advantage of providing small doses of casein absorbed over a longer time than simple coffee (ie the effects of cappuccino are longer lasting than coffee) ".
But there is a however. "The intestine – concludes the doctor – may not like casein or casein tannate".
