Valter Longo is the inventor of the fasting diet, a revolutionary diet that promises to extend life and protect us from disease.

Specialized in gerontology and cell biology, Professor Longo was born in Genoa, but studied in the United States at the University of California, in Los Angeles. At 51, he was included by Time in the list of the 50 most influential people in the world for health, thanks to the creation of the mima fasting diet, the result of 25 years of studies. Today he is director of the Longevity & cancer program at IFOM (the Firc Institute of Molecular Oncology) in Milan and the Longevity Institute of the University of Southern California.

What is so special about the fasting diet? This is a dietary scheme that promises to "reprogram" the body, reducing abdominal fat and inflammation, regenerating cells and keeping the body safe from diabetes, cancer, neurodegenerative and cardiovascular diseases. The benefits derive mainly from a calorie restriction and from the intake of a smaller quantity of food.

The expert does not propose a real fast, but only a decrease in meals. First of all, what can you eat in this diet? Only a few proteins are allowed, while complex carbohydrates are preferred, in the form of legumes, vegetables, whole grains and olive oil. The meat must be eliminated and replaced with vegetable proteins, while the fish can be consumed only 2-3 times a week, focusing on anchovies, cod, trout, shrimp, clams, sea bream and sardines, rich in vitamin B12 and omega 3. Largo space for all legumes (beans, chickpeas, peas and broad beans) and dried fruit, such as almonds, walnuts and peanuts.

How does the mimic fasting diet work? It should be practiced every 3-4 months for at least 5 days, but also once a month in the presence of particular problems such as high cholesterol or pre-diabetes. You can eat within 12 hours, starting after 8 and finishing before 8pm. 3-4 hours before going to sleep it is preferable not to take anything. People with normal weight can eat three meals and a 100-calorie snack a day, while those who are overweight should opt for two meals and two 100-calorie snacks. In any case, Valter Longo has devised kits designed to follow the diet of mimic fasting and ideal to better face this diet with great benefits.
