The month of January is not only reserved for “dry January” and its alcohol-free challenge. There is also talk of trying out a diet without animal proteins with the “veganuary” operation. Fortunately, this does not mean that we will have to deprive ourselves of going out to restaurants thanks to various food concepts that highlight the good taste of a meat-free plate. Here are three examples.
Lyon – The vegan sandwich shop
At the head of the best vegetarian restaurant in the world, according to the title awarded in 2020 by the We’re Smart Green Guide, the Lyon team at the Culina Hortus restaurant opened a more accessible extension of its veggie offering a year ago. focusing only on sandwiches. Goodbye Lyon rosette and another Lyonnaise-style rabbit terrine. Hello celery roasted for 12 hours, smoked candied onion, shiitake mushrooms marinated in soy or even mushroom duxelle with black garlic. All served in a bamboo container. The new spot called Culina in Via is another way to taste the talent of chef Adrien Zedda who has made Culina Hortus a successful address, to be recommended to both veggie consumers and other gourmands.

Paris – The vegan concept store
When you want to avoid animal proteins, it’s not just canteens or veggie counters that count. Even new forms of catering are getting up to date, like these third-party places where genres are deliberately mixed, namely grocery stores, bookstores, clothing, and sometimes even hairdressing salons. In the case of Today Demain, which opened in the 11th arrondissement of Paris, the owners had the idea of focusing only on vegan products. We are therefore talking about both the absence of leather on the racks and cosmetics that have not been tested on animals. On the restaurant side, the recipes do not contain milk or honey. But the menu is no less exotic with its share of exotic flavors. Guacamole, burgers, tacos, quesadillas, mac’n cheese and even nachos have all been adapted to veggie sauce, without a crumb of meat, fish or dairy products in the dishes.

Nice – The art gallery/vegan restaurant
It is often said that you first taste a dish with your eyes. And this doesn’t just apply to recipes based on animal proteins. The vegan cuisine also knows how to delight your eyes, particularly at the Saj restaurant, located in the heart of the old town of Nissa la Bella. The address serves as an art gallery with its anthology of paintings by local artists presented at the four corners of the tables. The Saj promises escape through its exhibition but also its cuisine, the DNA of which is inspired by the name of the place. The saj is in fact a type of pancake of Lebanese origin, which is traditionally cooked over a wood fire. The restaurant thus borrows the strong markers of Levantine cuisine largely fueled by vegetarian traditions to serve dishes without meat or fish.
